Scope:

Maintains cleanliness, sanitation, and organization of the kitchen, dish area, and related equipment to support safe food preparation and efficient kitchen operations.

Primary Responsibilities

  • Setup the dishwashing and pot sink stations, including filling dish machines, checking chemical levels, and preparing flatware pre-soak areas.
  • Scrape, rinse, and wash dishes, glassware, flatware, pots, and pans according to sanitation standards.
  • Store clean items in designated areas and maintain an organized dish and storage area.
  • Sweep and mop kitchen floors at the end of each meal period and as needed to address spills or debris.
  • Empty, clean, and sanitize trash receptacles when full and at scheduled intervals.
  • Monitor dish machine chemicals and water temperature throughout the shift; change water at required intervals.
  • Clean kitchen equipment and areas including hoods, filters, steam tables, bus carts, ovens, grills, and storage areas.
  • Maintain overall cleanliness and organization of kitchen and storeroom areas.
  • Report malfunctioning equipment, safety hazards, or sanitation concerns to a supervisor immediately.
  • Respond promptly and courteously to guest and team member requests.
  • Maintain a professional appearance and adhere to company grooming and uniform standards.
  • Follow all company policies, safety procedures, and food handling regulations.
Physical & Work Environment

This position involves continuous physical activity in a fast-paced kitchen environment.
  • Frequent standing and walking for the majority of the shift
  • Regular lifting and carrying of items weighing 5-25 pounds; occasional heavier lifting may be required
  • Repetitive motions including bending, reaching, lifting, and handling kitchen equipment
  • Exposure to hot water, cleaning chemicals, and kitchen equipment
  • Work in wet, humid, and high-temperature conditions
Communication & Cognitive Skills
  • Ability to understand and follow verbal instructions
  • Basic knowledge of chemical handling and kitchen safety procedures
  • Ability to work efficiently in a team-oriented environment
